Has anyone thought to insure their Priority packages so if they arrive late
and the contents of the package are damaged or dead you they will pay to
replace for all the damage they caused. I am thinking correctly here or
would insure not matter in this situation?

days have taken 7-9 days with Priority Mail since about mid-November. I've
been exceptionally lucky in that fish I've shipped have all arrived in
pretty-much good shape inspite of the lengthy shipping times. For the most
part, lengthy shipping times are better tolerated by fish in the winter than
in the summer (cooler temps = more dissolved O2 + slower metabolic rates, I
guess).
