Well, I haven't tried SC barbecue, and with all due respect to it, it's hard
to imagine any barbecue that's better than NC barbecue.

I should point out for any Northerners on the list that barbecue means
different things in different parts of the country.

In New Jersey and Long Island, for example, barbecuing means cooking stuff
over a charcoal or propane fire.

In the south, cooking over a fire is only the first step. The next step is
to take the meat--usually chicken or pork--and then mix it into a sauce or
some kind.

In place of a sugary or sweet sauce, however, North Carolinians use vinegar
and hot pepper.
