I have several sunnies in my tanks caught with hook and line. The first tip is to use barbless hooks, or smash down the barb with needlenose pliers. The next step is to set the hook as quick as you can. Between the barbless hooks, and the quick hook sets you will miss/lose a lot of fish, however the ones you do catch will only have a small mouth wound.

Once hooked, handle the fish as little as posible and get out the hook quickly. Then place fish in fresh water from the pond/lake/stream and add stress coat.

I also would try and collect only small sunnies. They seem to do much better.
