NANFA-L-- Snakehead edibility

I recently returned from a trip overseas and guess what I ate ... some fresh snakehead steaks. I can testify that the meat is white, tender and delicious. Also, very few bones - just the spine and some tiny bones around the edges

I bought two 12" specimens *live* at the fish market. The butcher took them off ice and threw them into a tub of water to show that they were still alive. As for their toughness, the butcher had to whack them on the head three times with a mallet before they died.

I sorely regret not having a camera with me on my visit to the main city fish market. That place was awesome. Huge carp, some cichlids, mackerel, bass-like saltwater fish, shrimp, and several others I couldn't ID.
